Pao de Queijo, the Brazilian Cheese Bread

I've been wanting to make these since a long time ago but never get around to actually making it until this morning. I first got a taste of it when I found it at Provence Bakery in Lippo Mall Kemang Village. They are sooo good especially when they have just came out from the oven. But after buying it a few times and realizing that they still look and taste ok after a few days I decided not to buy them anymore. Just scared me to think of the amount of pengawet that could possibly be in there!
Turned out, this is sooo easy to make, and if I can get it right the first time around, anyone can!
Ingredients:
- 2 small egs
- 1/4 cup olive oil
- 2/3 cup milk
- 1 1/2 cups tapioca flour
- 3/4 teaspoon sea salt
- Cheese, as many as you would like. I use parmesan and cheddaar cheese
Directions
- Combine the egg, oil, milk, flour and salt in a blender
- Add the cheese into the mix and blend again
- Pour the batter (it's very liquidy) into a muffin tin (don't forget to grease it first with margarine or oil)
- Put it in the oven and wait for 15-20 minutes untik it's just slightly golden
That's it, enjoy the chewy goodness!
